Mother's Day Tea!


#3 Host a tea party

Menu

Cucumber and cream cheese sandwiches

3 teaspoons fresh dill

1 8oz container whipped cream cheese

1 English cucumber thinly sliced

2 slices wheat bread

2 slices white bread

Chicken salad sandwiches

1 1/2 cup cooked chicken, finely chopped

1/2 cup cashews, finely chopped

2 tablespoons scallion, finely sliced

6 tablespoons mayo

Salt and pepper to taste

Egg and watercress sandwiches

4 tablespoons mayo

1/2 teaspoon grated lemon zest

5 hard boiled eggs

a handful of watercress

Zucchini and cheese mini quiches

2 large eggs

1/4 cup half and half

1/4 cup milk

1/16 teaspoon garlic powder

1/8 teaspoon white pepper

1/8 teaspoon sage

1/4 cup shredded Swiss cheese

1/4 cup shredded sharp cheddar

1/2 cup shredded fresh zucchini

1/2 pastry crust pie

Summer berry tartlets

3 tablespoons ground almonds

3/4 cup all purpose flour

1 1/2 tablespoon sugar

3 tablespoons butter, chilled and diced

2 tablespoons water

1/3 cup crème fraiche

1 1/2 tablespoon lemon curd

1 1/2 cups summer berries

1 1/2 cups heavy cream
